You get to be an expirimental guinea pig for her delicious asian-fusion meals that she is perfecting like a Top chef participant!
Even more impressive is she makes sure it is all lactose-free for me, and gluten-free for my chéri… that’s true friendship folks!
The most recent meal was vegan sushi shallots and seaweed wrapped in seaweeed for starters.
The main dish was not vegan : a seasame sautéed chicken with snow peas and mini corn.
She should get a crown for the dessert though, gluten and lactose free carrot cake! I have not had carrot cake in YEARS! I almost cried. It was so good, I may have died from pure food-joy and admiration!

I would love to make make a gluten free carrot cake! But I’m not sure I could go for the lactose free, I like cream cheese too much. But honestly, cheese and milk do not like me! What did your friend use for the icing?
Her icing was not lactose free, I didn’t eat it, but I bet you could find some almond, soy or rice products to make it!
